Mushrooms - let them sunbake for us!

A latest review by Australian scientists examined studies on mushrooms and found that these innocent little fungi can actually be Vitamin D factories. Like us, mushrooms need the sun to make vitamin D, but are unlikely to burn like us. When we eat mushrooms we absorb the vitamin D benefit.

However, some poor mushrooms miss out on getting any sun at all! They are the vitamin D deficient mushrooms. Good news is that studies have shown that we can put the poor little sun deprived fungi in the sun, gills up, to absorb a bit of sunlight before we eat them. Or buy wild or pre-sunbaked mushrooms. That way, they sunbake and we reap the benefit!
